Nuki widgets are missing from iPadOS 17.7. Widgets that were already setup were disabled and after removing them, I can’t find any nuki widgets to activate.

While not on iPadOS - my daughter’s iPhone (also on iOS 17, specifically 17.7.2) is exhibiting similar behavior.
The widgets she had for months (maybe years) stopped working - replaced by black blank rectangles. When I removed them, it was no longer possible to add them back in as Nuki is missing from the list of apps with widgets…
FWIW, on my own iPhone (iOS 18.1) - the new app works fine.
I think it may be related to the fact they rolled out a new widget system for interactive widgets:
